#Chicken fajitas with guac and refried beans

Serves 2

  • 1 chicken breast (~300g)
  • 1 onion - 3/4 for the fajitas, 1/4 for the guac
  • 1 bell pepper
  • 1 lime - 1/2 for the guac, 1/4 for the fajitas, 1/4 for the beans
  • 1 avocado
  • 2 garlic clove - 1 for fajitas, 1 for beans
  • 1 roma tomato
  • 1/2 jalapeno pepper
  • coriander
  • 300g pinto beans
  • soft tortillias
  • (optional) grated cheese
  1. Mix together the chicken spices:
    • 1/2 tsp chili powder
    • 1/2 tsp ground cumin
    • 1/2 tsp garlic powder
    • 1/4 tsp paprika
    • 1/4 tsp oregano
    • pinch salt
  2. Rub it into the chicken and leave to rest for 30 mins.
  3. Vege prep:
    • Fajitas: Chop 1 garlic clove, slice the pepper, and 3/4 of the onion
    • Guac: Remove seeds from tomato and jalapeno and dice finely, along with remaining onion
    • Beans: Chop the other garlic clove
  4. Fry chicken in oil
  5. Fry fajita veges (starting with garlic)
  6. Fry beans (starting with garlic), add in:
    • 1/4 tsp chili powder
    • 1/4 tsp cumin
    • pinch salt
    • 1/4 lime
  7. Mash avocado, add salt, add guac veges, squeeze in 1/2 lime, mix
  8. Slice chicken, add to the fajita veges pan, squeeze in 1/4 lime
