# Chicken fajitas with guac and refried beans Serves 2 * 1 chicken breast (~300g) * 1 onion - 3/4 for the fajitas, 1/4 for the guac * 1 bell pepper * 1 lime - 1/2 for the guac, 1/4 for the fajitas, 1/4 for the beans * 1 avocado * 2 garlic clove - 1 for fajitas, 1 for beans * 1 roma tomato * 1/2 jalapeno pepper * coriander * 300g pinto beans * soft tortillias * (optional) grated cheese 1. Mix together the chicken spices: * 1/2 tsp chili powder * 1/2 tsp ground cumin * 1/2 tsp garlic powder * 1/4 tsp paprika * 1/4 tsp oregano * pinch salt 2. Rub it into the chicken and leave to rest for 30 mins. 3. Vege prep: * Fajitas: Chop 1 garlic clove, slice the pepper, and 3/4 of the onion * Guac: Remove seeds from tomato and jalapeno and dice finely, along with remaining onion * Beans: Chop the other garlic clove 4. Fry chicken in oil 5. Fry fajita veges (starting with garlic) 6. Fry beans (starting with garlic), add in: * 1/4 tsp chili powder * 1/4 tsp cumin * pinch salt * 1/4 lime 7. Mash avocado, add salt, add guac veges, squeeze in 1/2 lime, mix 8. Slice chicken, add to the fajita veges pan, squeeze in 1/4 lime
